Dry Aged Beef: Dry aging involves hanging the beef carcass in a temperature and humidity-controlled environment for a few weeks. During this time, enzymes in the meat break down muscle fibers, enhancing tenderness and flavor. Dry aged beef tends to have a more concentrated, beefy flavor and a tender texture.
How does Grain-Finished Make a Difference?
Grain-finished cattle are typically raised on pasture but are fed a grain-based diet for the last few months of their lives to increase marbling and fat content in the meat. This results in a beefier flavor and more tender texture compared to grass-fed beef. Our Grain-Finished and Dry Aged Grass Fed comes from our good friend and previous production sale auctioneer Andy Korbs whose Angus Cattle live in the rolling hills of Oxford Ohio.
