Whole, Half, or Quarter Beef: This choice determines the quantity of beef you're purchasing. The choice here depends on your storage capacity, consumption rate, and budget.

  • Dry Aged: This refers to the aging process the beef undergoes after processing.

    • Dry Aged Beef: Dry aging involves hanging the beef carcass in a temperature and humidity-controlled environment for a few weeks. During this time, enzymes in the meat break down muscle fibers, enhancing tenderness and flavor. Dry aged beef tends to have a more concentrated, beefy flavor and a tender texture. ($200 extra per beef)

  • How does Grain-Finished Make a Difference?

    • Our grain-finished cattle are raised on pasture but are fed a grain-based diet for the last few months of their lives to increase marbling and fat content in the meat. This results in a beefier flavor and more tender texture compared to grass-fed beef. This beef also comes without hormones, antibiotics, so you can have piece of mind with your decision.
